Chocolate Chip Cookies (ala Mrs. Fields)

Servings: 3.5 dozen


Description:
loved this in Bataan... so long as you pre-heat the oven before preparing the ingredients, baking time is reduced to around 10 minutes (check the cookies if they look dry in a good way already)

Ingredients:
2 ½ cups all-purpose flour
½ tsp baking soda
1 cup dark brown sugar, firmly packed
½ cup white sugar
1 cup unsalted butter, softened
1 tsp salt
2 large eggs
2 tsp pure vanilla extract
2 cups (12 oz) semisweet chocolate chips


Directions:
Preheat oven to 350 F
In medium bowl , combine flour, soda and salt. Mix well with wire whisk. Set aside.

In a large bowl with an electric mixer blend sugars at medium speed. Add butter and mix to form a grainy paste, scraping down the sides of the bowl. Add eggs and vanilla extract, and mix at medium speed until light and fluffy.
Add the flour mixture and chocolate chips, and blend at low speed until just mixed. Do not overmix.

Drop by rounded tablespoons onto a cookie sheet (grease with some butter and sprinkle with flour), 2 inches apart. Bake around 10-15 minutes or until golden brown. Transfer cookies immediately to a cool surface with a spatula.

Funny the last time I tried baking chocolate chip cookies, they turned out soft :( Wondered what I did wrong. I did preheat the oven.

am not sure either what happened... with baking, it's harder to cut down on some of the ingredients...

but some recipes require the dough to be chilled, sometimes even overnight...

with this one... we just put smaller amounts on the cookie sheet and pat these flat so the cookies will be thinner and crunchier :) tastes especially nice with colored sugar or marshmallows that has melted all over it :)
